From Nice to Noosa
Coco started in the pizza world at just 16 in Nice, on the south coast of France. He worked his way up from the prep bench to head pizzaiolo, learning everything about dough, fire, timing and flavour along the way.
After more than a decade in some of France’s best pizzerias – including a restaurant ranked #1 in the country – life brought him to Australia. Now he’s cooking on FAVO ovens and sharing what he’s learned with home pizza lovers here.
Coco’s Pizza Philosophy
For Coco, pizza is simple:
Good dough, good ingredients, good company.
He believes in long-fermented dough, clean toppings, and letting the fire do its job. No shortcuts, no gimmicks – just real cooking.
